The kids had bike night at our church this past Wednesday night. What a blast they had! We have been going to this church for a little over a year now and my children are loving it. They count down the days until it is time to get ready for church, regardless if it is Sunday or Wednesday. This just makes my heart fill with love and joy, knowing that my children love going to church to learn about Jesus. I love hearing them talk on the way home about what they learned in class. The kids truly have awesome teachers that love Jesus so much. So thankful and blessed to have found a family friendly church!

Yes, It Has Been A While

Yes, It Has Been A While

Yes, it has been a while since I have posted. Life has just gotten in the way. The moment when I thought I was going to be able to make time to blog, something else happens and blogging has to take a back burner. However, things seem to be calming down at the moment. So, I am hoping to start posting more than once every 2 weeks. I have missed my Blessings post, iFellowship as well as Homeschool Mother’s Journal.

So just what have we been up to? School! Yes, we have been doing a lot of school work. I have finally found a phonics program that is working for my 2 younger kids. They actually wake up and want to do school now! That is a *HUGE* improvement for us. I am working on a review for the phonics program that we are using.

My oldest daughter was a Cheshire Cat in the musical “Alice in Wonderland”. She had a blast in the musical. She is now busy preparing for the dance recital that is at the end of the month. Sarah has been busy with her school work as well. She has just completed one math book and has started the next grade level. We are just loving Teaching Textbooks!

Our oldest son has been busy with school and with his part time job. He will be graduating this year. Where has the time gone? So hard to believe that I have a child old enough to be graduating from high school! He is also finishing up his A.S. Degree of Electrical Engineering Technology.

As you can see, the kids are keeping us busy. I wouldn’t have it any other way. God blessed us with our four wonderful kids and I love being able to spend so much time with them!

I have been busy with many little projects. Most importantly, my house! I have been cleaning and purging all of the rooms. I have been able to bless the thrift store with many bags of clothing, toys and other odds and ends. I have also helped with a used curriculum sale that our homeschool group hosted. I helped with a mom’s night out and homeschool information session evening. I was also able to attend a Chonda Peirce Concert. It was hilarious! Then for fun, I am taking part in a mom’s book club!

As you can tell, a lot has happened and I didn’t even mention all of the drama! However, things seem to be slowing down a little and for that I am thankful for. I am hoping it will give me more time to write and share about what I have swirling in the crazy head of mine.

Family Recipes – Coconut Cream Pie

I had someone to request that I give the Coconut Cream Pie recipe.  I remember being in the kitchen with my grandma when she baked this pie.  It was always so much fun to watch her cook and bake.  My dad would also cook this cake for holidays as well as for people for their birthdays.  I have yet to try to make this pie.  Perhaps I will attempt it this Thanksgiving.


Coconut Cream Pie
(makes two 9″ pies)

Pie

3/4 cup sugar                                  1 1/4 cup coconut
2/3 cup flour -sifted                         2 tsp. coconut extract
5 eggs -separated                            1/4 cup butter
3 cups milk

Combine sugar and 2/3 flour in pot that won’t stick.  Separate eggs.  Put yolks in 1/2 cup milk, beat well and set aside.  Add the rest of the milk (2 1/2 cups) to the flour and sugar mixture.  Cook on medium heat until thick, stirring constantly.  Add egg yolk mixture, cook until thick again, stirring constantly.  Add coconut, coconut extract and butter.  Remove from heat; let cool about 10 minutes.  Pour into 2 already baked 9″ pie crusts.

Meringue for Coconut Creme Pie

5 eggs whites                                 6 Tbsp. sugar
1/4 tsp. cream of tartar                  1/2 tsp. coconut extract

Beat egg whites and cream of tartar until frothy.  Add 6 Tbsp sugar and beat until stiff peaks form.  Add flavoring if desired when you add the sugar.  Put on top of the pie and sprinkle with coconut flakes.  Put in very hot oven long enough to just brown the meringue.
